Seven Layer Dip Recipe

 

This seven layer dip recipe has become a staple at almost every event I host.  It is very colorful, looks wonderful on a buffet table and is delicious. I never have any leftovers when I make this dip!


I was at my friend's house for a birthday party and on the buffet table was this wonderful yummy dip made from refried beans, sour cream and cheese.  When I commented on how delicious it tasted she smiled and said that she adds taco seasoning to the sour cream to give it some extra flavor.

I have always enjoyed seven layer dip and thought how much better it would be if I did the same to the sour cream layer - add taco seasoning too.  After a little trial and error I came up with the below recipe that turns out amazing every time.  I have since given out this recipe to many guests who have requested it.


Ingredients

  • 1 can refried beans

  • 2 avocados
  • 2 tbsp sour cream
  • 1 tbsp lime juice

  • 1 1/2 cups sour cream
  • 3 tsp taco seasoning

  • 1 to 1 1/2 cups salsa

  • 1 cup cheddar cheese, grated

  • 1/3 to 1/2 cups tomatoes, seeded and chopped

  • Green onions and / or black olives (as desired)

Directions

In a 9 x 9 inch square dish, spread the refired beans in an even layer.

Mash avocados in a small mixing bowl.  Add 2 tbsp sour cream and 1 tbsp lime juice.  Mix well.  Spread evenly on top of refired beans.

Combine sour cream with 3 tsp taco seasoning in small bowl.  Mix well.  Spread on top of avocado mixture.

Spread salsa on top of sour cream layer being careful to not mix the two.

Sprinkle grated cheddar cheese over the salsa.

Top with tomatoes, green onions and olives.

Serve this dip cold with tortilla chips and / or vegetable platter.
